Spicy Peanut Noodles
Description
Spicy Peanut Noodles combine cooked noodles with a sauce made by sautéing fresh minced ginger in neutral oil, then incorporating soy sauce, chili garlic sauce, chicken broth (or pasta water), creamy peanut butter, honey for sweetness, and freshly squeezed lime juice. The sauce simmers to a smooth, creamy consistency, allowing the noodles to absorb its bold, nutty, spicy flavors.
The dish is garnished with chopped green onions, cilantro, and peanuts, contributing vibrant herbaceous notes and textural contrast. Its balance of heat, tang, sweetness, and nuttiness creates a satisfying meal or side suitable for various noodle choices.
Vegetables like shredded carrots, broccoli, or peppers can be added either sautéed or simmered in the sauce, and chicken may be included for protein. Low sodium soy sauce and broth can be used to reduce salt content if desired.
