Spicy Peanut Noodles
These salty, spicy, and sweet peanut noodles are made in less than 15 minutes and are so easy and taste delicious. You will be craving these simple Spicy Peanut Noodles!

Ingredients
- 12 to 16 ounces Noodles *
- 1 Tablespoon oil
- 2 teaspoons fresh ginger (minced)
- 3 Tablespoons soy sauce
- 2 Tablespoons Chili garlic sauce
- 1 cup chicken broth (or pasta water)
- 1/2 cup creamy peanut butter
- 1 Tablespoon honey or maple syrup (or sugar)
- 1 Tablespoon fresh lime juice
Garnish:
- Green Onions, Cilantro, Chopped Peanuts, Chili Garlic Sauce or Chili Crunch
Instructions
- Fill a pot with water and place over high heat until boiling. Add noodles and cook according to package instructions. Drain.
- While noodles are cooking, heat a large skillet over medium heat add oil and ginger and saute for 1 minute. Add soy sauce, chili garlic sauce, chicken broth, peanut butter, and honey. Stir together and cook for 3-4 minutes until the sauce is smooth and creamy. Stir in fresh lime juice. Add pasta water until the sauce is the desired consistency.
- Toss drained noodles into the sauce and toss to coat. Top with green onions/scallions, cilantro, and chopped peanuts.

Notes
- What type of noodles should I use?
- Use your favorite type of Asian noodle such as egg noodles, ramen noodles, or stir-fry noodles. I prefer to use fresh noodles. You can also use spaghetti noodles or linguine noodles.
- Can I add vegetables?
- Yes! You can saute the vegetables before putting them into the spicy peanut sauce or throw them into the sauce and let them simmer. I suggest adding shredded carrots, broccoli or peppers. You can also add chicken for protein.
- To control the salt intake...you can use low sodium soy sauce and low sodium chicken broth or just pasta water.
