Spicy Roasted Cashew Nuts

Ingredients

  • 2.5 cups (375g) raw unsalted cashews (halves or whole)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground coriander cilantro
  • 1/2 teaspoon ground cumin
  • salt
  • 1.5 tablespoon oil

Instructions

  1. Pre-heat oven to fan assisted 140C /160C / 325F /Gas 3.
  2. Line a roasting tray with baking parchment.
  3. Combine all the ingredients together in a bowl.
  4. Spread out spiced cashews in a single layer on the roasting tray.
  5. Roast for about 15 min turning them twice to ensure they are evenly roasted
  6. Remove from the oven and transfer to a serving bowl.
  7. Now try very hard to keep your hands off them till the guest arrive.
  8. Serve and enjoy.
