Spicy Soba Noodles

These spicy soba noodles bring bold flavor with nutty noodles, crisp veggies, and a fiery sauce. A quick and easy Japantown-inspired dinner!

Ingredients

Main Ingredients
  • 5 ounces soba noodles or buckwheat noodles
  • 8 ounces firm tofu dried and sliced into ½-inch thick pieces
  • 3 medium green onions sliced into 1-inch pieces
  • 1 medium carrot cut into thin matchsticks
  • 3 radishes cut into thin matchsticks
  • 1 tablespoon oil
  • sesame seeds or chopped fresh cilantro, for garnish (optional)
Sauce Ingredients
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon toasted sesame oil
  • 1 tablespoons Sriracha depending on desired heat level
  • 1 tablespoon White miso paste or sweet miso paste
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger minced

Instructions

Prep the Ingredients

  1. Peel and mince the ginger and garlic. In a small bowl, whisk together ginger, garlic, soy sauce, toasted sesame oil, sriracha, and miso paste until smooth.
  2. Peel the carrot and cut into thin matchsticks approximately 1 inch long. Cut the radishes into matchsticks of a similar size.
  3. Slice the green onions into 1-inch pieces. Drain and dry the tofu, then cut into pieces approximately ½ inch thick and 1 to 2 inches long.
Cook the Noodles
  1. Bring a pot of water to a boil. Cook the soba noodles according to the package directions until just chewy. Drain and rinse with lukewarm water to remove excess starch.
Cook the Vegetables and Tofu
  1. In a large pan over medium heat, add the carrot and cook for 1 minute, stirring lightly.
  2. Add the tofu and continue cooking for 2 minutes, stirring occasionally.
  3. Add the radishes and green onions, cooking for 1 additional minute until just warm.
Combine and Serve
  1. Pour the sauce into the pan and cook for 1 minute, stirring to combine.
  2. Remove from heat and add the cooked soba noodles. Toss until everything is evenly coated with the sauce.
  3. Serve immediately, garnished with sesame seeds or chopped cilantro, if desired.
