Ingredients
Main Ingredients
- 5 ounces soba noodles or buckwheat noodles
- 8 ounces firm tofu dried and sliced into ½-inch thick pieces
- 3 medium green onions sliced into 1-inch pieces
- 1 medium carrot cut into thin matchsticks
- 3 radishes cut into thin matchsticks
- 1 tablespoon oil
- sesame seeds or chopped fresh cilantro, for garnish (optional)
Sauce Ingredients
- 2 tablespoons soy sauce or tamari
- 1 tablespoon toasted sesame oil
- 1 tablespoons Sriracha depending on desired heat level
- 1 tablespoon White miso paste or sweet miso paste
- 2 cloves garlic minced
- 1 tablespoon fresh ginger minced

Instructions
Prep the Ingredients
- Peel and mince the ginger and garlic. In a small bowl, whisk together ginger, garlic, soy sauce, toasted sesame oil, sriracha, and miso paste until smooth.
- Peel the carrot and cut into thin matchsticks approximately 1 inch long. Cut the radishes into matchsticks of a similar size.
- Slice the green onions into 1-inch pieces. Drain and dry the tofu, then cut into pieces approximately ½ inch thick and 1 to 2 inches long.
Cook the Noodles
- Bring a pot of water to a boil. Cook the soba noodles according to the package directions until just chewy. Drain and rinse with lukewarm water to remove excess starch.
Cook the Vegetables and Tofu
- In a large pan over medium heat, add the carrot and cook for 1 minute, stirring lightly.
- Add the tofu and continue cooking for 2 minutes, stirring occasionally.
- Add the radishes and green onions, cooking for 1 additional minute until just warm.
Combine and Serve
- Pour the sauce into the pan and cook for 1 minute, stirring to combine.
- Remove from heat and add the cooked soba noodles. Toss until everything is evenly coated with the sauce.
- Serve immediately, garnished with sesame seeds or chopped cilantro, if desired.
