Spicy Thai Pasta Salad
This Spicy Thai Pasta Salad combines bowtie pasta with a bold dressing of infused sesame and vegetable oils, honey, soy sauce, and red pepper flakes. The result is a tangy, sweet, and moderately spicy cold salad, accented by crunchy peanuts, fresh cilantro, and green onion. Chilling allows the pasta to absorb the flavors, making it a flavorful side or dish for warm days.
Ingredients
- 12 ounces bowtie pasta
- 1 to 2 teaspoons red pepper flakes crushed
- 2 tablespoons vegetable oil
- 1/3 cup sesame oil
- 1/4 cup honey
- 1/4 cup soy sauce
- 1/2 teaspoon salt
- 1/2 cup cilantro chopped, fresh
- 1/2 cup peanuts honey roasted
- 1/2 cup green onion sliced
Instructions
- Cook pasta according to package directions and drain well and transfer to a large mixing bowl.
- Meanwhile, heat vegetable oil and sesame oil in a saucepan over medium heat. Add in crushed red pepper stir red pepper, stir, and cook for 2 minutes to infuse the flavor.
- Add in honey, soy sauce and salt. Turn off the heat and mix well. Pour over cooked pasta, coating evenly, and stir until all pasta is coated with oil.
- Cover with plastic wrap and refrigerate 4 hours or overnight.*
- When ready to serve, stir in chopped cilantro, peanuts and green onions.
