Spicy Tilapia with Watermelon Pico

Eating heathy just became a lot easier (and tastier!) after introducing this Spicy Tilapia with Watermelon Pico into our dinner rotation. Easy to prepare, delicious and the epitome of summer fare.

Ingredients

  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1/4 tsp cayenne pepper
  • 3/4 tsp salt
  • 4 tilapia filets
  • 1 cup diced tomato
  • 1/2 cup diced watermelon
  • 1 small jalapeno, finely diced
  • 1/4 cup diced onion
  • 1 large garlic clove, grated
  • 1 1/2 tbsp lime juice
  • 1/4 cup chopped cilantro
  • 1/4 cup crumbled feta (optional)

Instructions

  1. Preheat oven to broil. Spray a large baking sheet with non-stick cooking spray. 
  2. Mix garlic powder, paprika, onion powder, oregano, cayenne and salt together in a small bowl. Place tilapia on baking sheet. Sprinkle evenly with seasoning. Broil until blackened and cooked through, about 5-6 minutes. 
  3. While the fish cooks, mix tomatoes, watermelon, jalapeño, onion, garlic, lime juice, and cilantro together in a medium bowl. Season to taste with salt and pepper. Serve over tilapia. If using, sprinkle feta on top.
