Spinach and Avocado Grilled Cheese

Spinach and Avocado Grilled Cheese sandwiches combine creamy avocado, fresh spinach leaves, and melty cheese varieties like American, Pepper Jack, or mild cheddar. The sandwich is grilled to a golden crust with butter or mayo on the outside for crispness, while the interior melds smooth avocado and warming cheese with a subtle green freshness from the spinach.

Ingredients

  • 2 lices bread
  • 2-3 lices American cheese or Pepper Jack, or Mild White Cheddar, melty cheese
  • 1/2-1 avocado (feel free to use half or a whole avocado)
  • 6-10 spinach fresh leaves
  • butter as needed

Instructions

  1. Top one slice of bread with sliced or mashed avocado. To amp up the flavor, sprinkle a teeny pinch salt over the avocado - so good! Top with spinach and 2 slices of cheese then seal with remaining slice of bread.
  2. For an extta melty grilled cheese, add an optional additional slice of cheese to the bottom slice before adding the avocado. YUM!
  3. Optional: for an extra golden crust, spread the outside of each slice of bread with mayo or melted/spreadable butter.
  4. Next heat a pan to medium heat with a pad or two of butter. Once hot, add your sandwich.
  5. Use a spatula to press down on the grilled cheese, and feel free to pop a clear pot lid on top to help melt the cheese. (my favotite trick) Before flipping, add a little more spread/oil if your pan is dry. Pop your lid back on if you're using one and grill each side until golden brown.
  6. Slice in half and chow down while it's hot!

Notes

  • Adjust cheese type to preference for different flavor profiles like tangy Pepper Jack or smooth mild cheddar.
  • Use a spatula to press the sandwich during cooking to promote even melting and browning.
  • For an extra golden crust, spread the bread slices with mayo or butter before grilling.
  • Slice and serve the sandwich immediately while cheese is melted and avocado is fresh.
