Ingredients

  • 8 oz. baby spinach (226g)
  • 6 oz. raspberries (170g)
  • 6 oz. blueberries (170g)
  • 6 oz. strawberries (170g) quartered
  • 1 cup fat-free feta cheese (112g)
  • 1/3 cup red onions (17g) thinly sliced
  • 1/4 cup walnuts (30g) chopped

Instructions

    Cup of Yum
  1. Rinse and dry fruit. Fruit that is dried well will help keep the salad fresh longer!
  2. Add all ingredients to a large salad bowl and toss to combine.

Notes

  • If serving immediately for a crowd, toss with salad dressing. If planning to eat the salad the next few days or to make it last longer, store dressing separately and add when ready to eat.
  • I would recommend my Light Balsamic Vinaigrette with this one, but the Skinny Honey Mustard dressing and Light Greek Dressing is also amazing.
  • Without salad dressing, salad will stay fresh in the fridge, covered for 3-4 days.
