Spinach and Berry Salad
Sweet berries, crunchy walnuts, feta cheese and crisp red onion onion -- the perfect combo for a delicious (and beautiful!) spring and summer salad! Keep this Spinach and Berry Salad light as a side dish or add your favorite protein for a low-carb, low-fat, delicious meal. Highly recommend eating with my Light Balsamic Vinaigrette dressing!

Ingredients
- 8 oz. baby spinach (226g)
- 6 oz. raspberries (170g)
- 6 oz. blueberries (170g)
- 6 oz. strawberries (170g) quartered
- 1 cup fat-free feta cheese (112g)
- 1/3 cup red onions (17g) thinly sliced
- 1/4 cup walnuts (30g) chopped
Instructions
- Rinse and dry fruit. Fruit that is dried well will help keep the salad fresh longer!
- Add all ingredients to a large salad bowl and toss to combine.

Notes
- If serving immediately for a crowd, toss with salad dressing. If planning to eat the salad the next few days or to make it last longer, store dressing separately and add when ready to eat.
- I would recommend my Light Balsamic Vinaigrette with this one, but the Skinny Honey Mustard dressing and Light Greek Dressing is also amazing.
- Without salad dressing, salad will stay fresh in the fridge, covered for 3-4 days.
