Spinach and Feta Palmiers
Palmiers are French pastries shaped similarly to elephants’ ears or a butterfly. They can be sweet or savory, plain or filled – such as my Cheesy Spinach and Feta Palmiers – making them perfect to serve as hors d’oeuvres. And if you are using store-bought puff pastry (as I did in this recipe), they’re as super easy to make.

Ingredients
- 2 Puff pastry sheets (rolled, thawed according to package instructions)
Filling
- One 10-ounce package frozen chopped spinach (thawed and squeezed dry)
- 1 cup feta (crumbled)
- ¼ cup mozzarella cheese (shredded)
- 1 green onion stalk (finely diced green part only)
- 2 garlic cloves (small, finely minced)
- salt and pepper (to taste)
Instructions
- Unroll the puff pastry sheet out on a cutting board or kitchen counter.
- In a medium bowl mix all filling ingredients.
- Spread this mixture on the puff pastry, leaving a ½-inch border all the way around.
- Starting from one end of the puff pastry. Tightly roll one side of the puff pastry towards the center.
- Then start from the other side and roll that into the center.
- Wrap it tightly with plastic wrap and place it in the freezer until slightly firm (about 30 minutes).
- Preheat the oven to 400°F or Preheat Air Fryer to 350°F.
- Remove from freezer. With a very sharp knife, cut ½-inch slices. Place them on a parchment paper lined baking sheet or lightly greased Air Fryer tray/basket.
- OVEN COOKING METHODBake for 20 minutes, or until cooked through and golden brown.AIR FRYER COOKING METHODCook for 10 minutes, or until cooked through and golden brown.
- Serve immediately or at room temperature.
