Spinach Artichoke Cups

These spinach artichoke cups combine a crunchy wonton cup with a creamy spinach artichoke dip filling! The perfect party food or finger food for a dinner party!

Ingredients

  • 48 wonton wrappers
  • ¼ cup mayo
  • ⅓ cup shredded Parmesan cheese
  • ¼ cup plain greek yogurt
  • 1 cup frozen chopped spinach thawed and drained
  • 15 oz canned or jarred artichokes not marinated
  • 6 oz cream cheese
  • ¼ tsp garlic powder
  • ¼ tsp kosher salt

Instructions

For the Cups

  1. Preheat the oven to 375 degrees.
  2. Spray mini muffin tins with a non-stick baking spray.
  3. Press a wonton wrapper into each of the baking cups with your fingers to create a cup.
  4. Bake for 7-8 minutes or until they are lightly browned and crispy.
  5. Remove muffin cups from the tin and let cool on a cooling rack.
  6. Fill cooled cups with spinach artichoke dip filling and serve warm.
For the Spinach Dip Filling
  1. Heat up the cream cheese in a microwave safe bowl for one minute or until soft.
  2. Mix the mayo, yogurt, garlic powder, and salt into the cream cheese.
  3. Add in the chopped spinach, artichokes, and Parmesan cheese. Stir until well combined.
