Spinach Berry Salad

This spinach berry salad takes baby spinach, a blend of fresh berries, roasted walnuts, and some salty goat cheese and tosses it in a delicious homemade poppyseed dressing.

Ingredients

For poppy seed dressing:
  • ⅓ cup yogurt plain, Greek
  • ¼ cup milk
  • 1 tablespoon honey
  • 1 tablespoon poppy seeds
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon kosher salt
For salad:
  • 6 ounces spinach fresh baby
  • ½ cup strawberries halved, diced, or quartered
  • ⅓ cup walnuts salted, roasted
  • ¼ cup raspberry
  • ¼ cup blueberries
  • 2 ounces goat cheese crumbled

Instructions

For poppy seed dressing:
    Cup of Yum
  1. Whisk together all of the ingredients in a small bowl.
  2. Store in an airtight container in the fridge until ready to use. 
For salad:
  1. Add the spinach, strawberries, walnuts, raspberries, blueberries, and goat cheese to a large bowl.
  2. Drizzle over as much dressing as you like (I usually use about ½-¾ of it) and toss to combine. 
  3. Serve immediately.
