Ingredients
- 4 potatoes peeled and chopped
- 5-6 tablespoons butter
- 3 cups chopped spinach
- ½ cup green onions minced
- 1 cup milk or cream
- salt and pepper
Instructions
- Boil potatoes until fork tender, about 15-20 minutes. Drain.
- Melt butter in pan over medium-high heat. Add spinach and green onions. Cook 1-2 minutes until wilted.
- Mash potatoes with milk or cream.
