Spinach & Feta Brown Rice

Ingredients

  • 1 cup brown rice
  • 2 cups water
  • ½ teaspoon salt
  • ¼ teaspoon Dill
  • 2 cups spinach chopped
  • ¼ cup tomato basil feta crumbled

Instructions

  1. In a rice cooker combine the brown rice, water, and salt.
  2. Once the rice is done cooking mix in the dill, chopped spinach and crumbled tomato basil feta. Serve immediately.

Notes

  • I highly recommend a rice cooker. It's the only way I cook rice because I love that it's hands-off. If you don't have one, simply follow the package directions for stovetop preparation.
