Spinach Gratin
Spinach Gratin features a creamy blend of chopped spinach baked beneath a golden crust of Parmesan and Gruyere cheeses. A smooth, lightly spiced white sauce made with butter, onion, nutmeg, flour, cream, and milk envelops the spinach, resulting in a rich and comforting side dish with a slightly crispy top and tender interior.
Ingredients
- 4 tablespoons butter unsalted
- 1 large onion finely chopped, yellow
- 1/4 cup flour
- 1/2 teaspoon nutmeg , freshly grated
- 1 cup heavy cream
- 2 cups milk whole
- 3 pounds spinach chopped, frozen
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper coarse ground
- 1 cup Parmesan Cheese , grated
- 1/2 cup gruyere cheese , grated
Instructions
- Preheat the oven to 425 degrees and grease an 8x8 baking dish.
- Melt butter in a large dutch oven then add in the onions and cook on medium heat until translucent, about 10-12 minutes.
- Whisk in the flour and nutmeg and cook for 2 minutes.
- Whisk in the heavy cream and milk and cook for 5-7 minutes until thickened.
- Drain and squeeze the spinach dry then add it into the dutch oven and whisk well to combine.
- Add in the salt, pepper, parmesan and gruyere cheese and whisk well.
- Pour the mixture into a baking dish and bake for 20 minutes until the top is browned and slightly crispy.
