Spinach Gratin

Spinach Gratin features a creamy blend of chopped spinach baked beneath a golden crust of Parmesan and Gruyere cheeses. Description

This Spinach Gratin starts by gently sautéing finely chopped onions in butter until translucent, forming a flavorful base. Flour and grated nutmeg are then whisked in to create a light roux, followed by the gradual addition of heavy cream and whole milk to build a smooth, thickened white sauce.

Thawed and well-drained frozen spinach is incorporated into the sauce along with kosher salt, coarse black pepper, and generous amounts of Parmesan and Gruyere cheeses. The mixture is poured into a greased baking dish and baked at high heat until the top turns golden brown and crisp while the interior remains creamy.

This gratin can be served as a warm, cheesy side dish accompanying roasted meats or poultry, or enjoyed on its own. The blend of cheeses adds depth and nuttiness complementing the mild spinach and rich sauce.

  • 4 tablespoons butter unsalted
  • 1 large onion finely chopped, yellow
  • 1/4 cup flour
  • 1/2 teaspoon nutmeg , freshly grated
  • 1 cup heavy cream
  • 2 cups milk whole
  • 3 pounds spinach chopped, frozen
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper coarse ground
  • 1 cup Parmesan Cheese , grated
  • 1/2 cup gruyere cheese , grated

Instructions

  1. Preheat the oven to 425 degrees and grease an 8x8 baking dish.
  2. Melt butter in a large dutch oven then add in the onions and cook on medium heat until translucent, about 10-12 minutes.
  3. Whisk in the flour and nutmeg and cook for 2 minutes.
  4. Whisk in the heavy cream and milk and cook for 5-7 minutes until thickened.
  5. Drain and squeeze the spinach dry then add it into the dutch oven and whisk well to combine.
  6. Add in the salt, pepper, parmesan and gruyere cheese and whisk well.
  7. Pour the mixture into a baking dish and bake for 20 minutes until the top is browned and slightly crispy.
