Spinach Mushroom Casserole

Ingredients

  • 2 Tablespoon butter
  • 10 oz. mushrooms chopped
  • 1 box frozen spinach thawed
  • 6 slices white bread
  • 1 cup mozzarella cheese shredded
  • 1 can Campbell's® Condensed Cream of Mushroom Soup
  • 1/2 cup milk
  • 1 egg
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

  1. Preheat the oven to 375.
  2. Melt the butter in a frying pan over medium heat. Saute the mushrooms until they are browned, about 8 minutes.
  3. While they are browning cut bread into cubes and make sure all the water is squeezed out of the thawed spinach.
  4. Spray a 2 quart casserole dish with cooking spray.
  5. Put 1/2 the bread cubes, spinach and mushrooms in the casserole dish and top with 1/2 the cheese.
  6. Repeat the layers with remaining ingredients.
  7. In a large measuring cup whisk the Campbell's® Condensed Cream of Mushroom Soup with the milk and an egg. Pour over the casserole pan.
  8. Bake for 45 minutes, until the top just starts to brown.
