Spinach Salad with Citrus Dressing

Ingredients

DRESSING
  • 2 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • 2 tablespoons grapefruit juice
  • ½ teaspoon sugar
  • ½ teaspoon orange zest grated
  • ⅛ teaspoon salt
  • ⅛ teaspoon ground cinnamon
SALAD
  • 4 ounces spinach stemmed, washed and dried, fresh
  • 1 grapefruit peeled and sectioned
  • 1 orange , peeled and sectioned
  • ¼ cup almonds chopped almonds, toasted

Instructions

  1. Mix together all the dressing ingredients in a small bowl, cover and chill until ready to serve.
  2. Place the spinach, fruits in a large bowl. Toss with enough dressing to coat well. Sprinkle the almonds over the salad and toss again.

Notes

  • Add pomegranate seeds during the holiday season for festive color enhancements.
  • Include fresh mint leaves for a refreshing note in the summer months.
  • Thinly sliced red onion can add an additional flavor layer to the salad.
  • Using mixed greens instead of spinach is possible, but dress right before serving to prevent wilting.
  • For a creamier dressing, add a teaspoon of Dijon mustard, especially in winter versions.
