Spinach Salad with Citrus Dressing
Description
Spinach Salad with Citrus Dressing blends tender spinach with juicy grapefruit and orange sections accented by toasted almonds for texture. The citrus dressing, made with olive oil, white wine vinegar, fresh grapefruit juice, orange zest, sugar, salt, and a hint of cinnamon, provides a lively and slightly sweet tang that complements the salad components.
The salad offers a refreshing mix of flavors and textures — the slight bitterness of raw spinach, sweet and tart citrus fruits, and crunchy almonds enhanced by the aromatic, lightly spiced dressing. It can serve as a light side dish or a palate-cleansing starter.
Variations noted in the recipe include adding pomegranate seeds during holidays for color, fresh mint for aroma in summer, or thinly sliced red onion to introduce more layers of flavor. Using mixed greens instead of spinach is possible but may affect freshness, so toss with dressing right before serving. Incorporating Dijon mustard into the dressing can add creaminess and depth in winter versions.
