Spinach, Zucchini, and Carrot Dog Treats

Ingredients

  • 1 cup pumpkin puree
  • ¼ cup creamy peanut butter
  • 2 large eggs
  • ½ cup old fashioned quick oats
  • 3 cups whole wheat flour, divided, or more, as needed
  • 1 cup baby spinach finely chopped
  • 1-2 small carrots grated
  • 1 zucchini grated

Instructions

  1. Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
  2. Whisk the pumpkin puree, peanut butter, and eggs until well combined, about 1-2 minutes.
  3. Gradually add old-fashioned oats and 2 1/2 cups of whole wheat flour, mixing with a rubber spatula just until incorporated.
  4. Add an additional 1/4 cup flour at a time just until the dough is no longer sticky.
  5. Add spinach, zucchini, and carrot, mixing until just incorporated.
  6. Working on a lightly floured surface, knead the dough 3-4 times until it comes together.
  7. Using a rolling pin, roll the dough to 1/4-inch thickness.
  8. Use a cookie cutter to cut out the desired shape and place it onto the prepared baking sheet.
  9. Place into oven and bake until the edges are golden brown, about 20-25 minutes.
  10. Remove from the oven and allow to cool completely on a wire rack.
  11. Store in a sealed container in the refrigerator. Enjoy.
