Ingredients
- 1 cup pumpkin puree
- ¼ cup creamy peanut butter
- 2 large eggs
- ½ cup old fashioned quick oats
- 3 cups whole wheat flour, divided, or more, as needed
- 1 cup baby spinach finely chopped
- 1-2 small carrots grated
- 1 zucchini grated

Instructions
- Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
- Whisk the pumpkin puree, peanut butter, and eggs until well combined, about 1-2 minutes.
- Gradually add old-fashioned oats and 2 1/2 cups of whole wheat flour, mixing with a rubber spatula just until incorporated.
- Add an additional 1/4 cup flour at a time just until the dough is no longer sticky.
- Add spinach, zucchini, and carrot, mixing until just incorporated.
- Working on a lightly floured surface, knead the dough 3-4 times until it comes together.
- Using a rolling pin, roll the dough to 1/4-inch thickness.
- Use a cookie cutter to cut out the desired shape and place it onto the prepared baking sheet.
- Place into oven and bake until the edges are golden brown, about 20-25 minutes.
- Remove from the oven and allow to cool completely on a wire rack.
- Store in a sealed container in the refrigerator. Enjoy.
