Spritz Cookies
These make-ahead classic Spritz Cookies fit perfectly with the rest of my Holiday cookie collection. They are super easy to make, melt-in-your-mouth delicious, buttery, perfectly sweetened, and have a wonderful hint of almond flavor. Decorate them any way you like, dip them in chocolate, cover them in sprinkles, you decide!

Ingredients
- 3½ cups all-purpose flour
- ¼ teaspoon salt
- 1½ cups butter unsalted and softened to room temperature (3 sticks)
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon almond extract
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven: Preheat the oven to 350°F.
- Mix flour and salt: Add the flour, salt to a medium size bowl and mix to combine.
- Cream butter and sugar: Add the butter and sugar to the bowl of your mixer and beat until light and fluffy. Add the eggs, almond and vanilla extract and mix well.
- Mix flour and butter mixtures: Gradually add the flour mixture to the butter mixture and beat until combined.
- Press cookies: Attach the desired disks to the cookie press and fill it with dough. Press cookies onto an ungreased cookie sheet. Repeat with remaining dough.
- Bake the cookies: Transfer the baking sheet to the oven and bake for 10 - 12 minutes or until the edges are lightly golden.
- Cool and finish: Allow the cookies to cool for 2 minutes on the baking sheet then transfer to a cooling rack to finish cooling. Decorate if desired.

Notes
- Recipe yields about 130 cookies.
- should not be warm for Spritz cookies.
- Make these cookies up to a month before Christmas for a stress free snack during the Holidays.
- Add a little food coloring to the dough for a more festive cookie.
- Butter is what give these cookies their tender, rich texture and delicious flavor. Do not substitute with margarine.
- Layer these delicate cookies between sheets of waxed paper in an airtight container. The cookies will stay fresh at room temperature or in the refrigerator up to 3 days.
- Spritz cookies freeze very well. To freeze, allow the cookies to cool completely before placing them in an airtight container (or an airtight freezer Ziploc bag). Store in the freezer for up to 1-2 months.
