St. Patrick's Day Oreo Truffles

Looking for the perfect no bake St. Patrick’s Day treat? St. Patrick’s Day Oreo Truffles are flavorful, incredibly simple to make and call for just four ingredients. They’re ready in about 30 minutes, too, so they’re a perfect quick dessert!

Ingredients

  • 20 Oreo cookies regular, not Double Stuf
  • 4.5 oz. cream cheese 130g, softened (full-fat!!!)
  • 12 oz. white candy melts 340g
  • 2 tablespoons St. Patrick's Day sprinkles

Instructions

  1. Grind the Oreos into a fine powder in a high-speed blender or food processor. This will take 2-3 minutes, depending on your device. Transfer the Oreo powder into a large mixing bowl.
  2. Add cream cheese to the Oreos. Mix together until well incorporated with a rubber spatula or a hand mixer.
  3. Roll the mixture into 1” balls. You may use a cookie scoop if you want the truffles to be evenly sized.
  4. Once shaped, place on a parchment or wax paper-lined baking tray.
  5. Freeze for 30 minutes to firm up the truffles.
  6. Once the truffles have been in the freezer for 25 minutes, melt the candy melts. I do this in the microwave for a minute, stirring them every 20 seconds, until they’re completely melted.
  7. Remove the truffles from the freezer.
  8. Dip the truffles one by one in the melted candy melts. Use a fork or a spoon to help with this process, swirling them in the candy melts until they’re coated.
  9. Place on the lined baking sheet, and decorate with the St. Patrick’s Day sprinkles.
  10. Let the candy coating harden for 10-15 minutes before transferring to a serving dish.
