Ingredients

Cranberry Bliss Bars
  • 1/2 cup unsalted butter , melted
  • 1 cup brown sugar , packed
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 cup flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 3/4 cup white chocolate chips
  • 1/2 cup dried cranberries
Frosting and Toppings
  • 2 tablespoons orange juice
  • 1 teaspoon orange zest
  • 4 ounces cream cheese , softened
  • 1 teaspoon vanilla extract
  • 3 cups powdered sugar
  • 1 cup white chocolate melting disks , melted and divided
  • 1/4 cup cranberries

Instructions

  1. Preheat oven to 350 degrees and spray a 9x13 inch baking pan with baking spray.
  2. In a large bowl whisk together the melted butter, brown sugar, egg and vanilla extract.
  3. Sift together the flour, salt and ginger.
  4. Add in the flour mixture, 1/2 cup of cranberries and 3/4 cup white chocolate chips and whisk until just combined
  5. Spread the mixture evenly in your baking dish and bake for 20-25 minutes.
  6. Melt the white chocolate in a microwave safe bowl for 1 minute in 30 second increments until smooth.
  7. In your stand mixer, add the cream cheese, vanilla extract, 3/4 of the white chocolate you just melted, 3 cups of powdered sugar, orange juice, orange zest and beat on medium high for 2-3 minutes until the mixture is really light and fluffy.
  8. Spread the frosting on the bars, sprinkle on the 1/4 cup of cranberries and drizzle on the 1/4 cup melted white chocolate.
