Steak and Blue Cheese Salad

This steak and blue cheese salad recipe is a quick, delicious meal that's ready in minutes. The balsamic dressing is packed with flavor and is the best topping for this easy main dish salad!

Ingredients

For the Steak Salad
  • 8 ounces cooked steak sliced, see note
  • 10 ounces tomatoes sliced
  • 4 cups salad greens
  • 1 purple onion sliced
  • ⅓ cup blue cheese or gorgonzola cheese, see note
For the Balsamic Dressing
  • ½ cup olive oil
  • ¼ cup balsamic vinegar
  • 1 teaspoon garlic minced, about 1 clove
  • 2 teaspoons honey
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions

For the Balsamic Dressing:
    Cup of Yum
  1. Combine all ingredients in a mason jar. Shake well to combine. 
For the Steak Salad:
  1. Layer the sliced steak, tomatoes, and onions over the salad greens. 
  2. Crumble the cheese over the top. 
  3. Top with half of the salad dressing, serve the rest on the side. 

Notes

  • Eight ounces of steak is about 2 small steaks or 1 large steak. I use a variety of cuts for this recipe. New York strips are our favorite.
  • Gorgonzola is a great substitution for blue cheese, and the amount of cheese is flexible.
  • Let the dressing rest while you assemble the salad so it has a bit of time to build flavor. I can literally just drink this dressing, it's so good!
  • I'll usually serve some sort of garlic bread on the side with this salad for an easy side.
