Steak and chips (Steak Frites)

Steak fries is a traditional dish consisting of a steak accompanied by fries, commonly served in French brasseries.

Ingredients

  • 1 lice of beef filet , approximately ½ lb / 250 g
  • 2 tablespoons butter
  • salt
  • pepper , freshly ground
  • 12 oz. French Fries

  1. Remove the meat from the refrigerator 1 hour in advance and pat dry, which will provide a good crust. Season with salt and pepper.
  2. In a heavy-bottomed pan (ideally cast iron), melt the butter over medium heat.
  3. Wait until the butter stops foaming before placing the steak in the pan.
  4. Let the meat cook over high heat for about 1 minute before turning it over.
  5. Perform the same operation on the other side to obtain a rare steak.
  6. For a meat more cooked through, reduce the heat temperature after the first 2 minutes to prevent the meat from becoming too dry on the outside. With an extra minute for each side, the meat is medium rare.
  7. For medium or well-done meat, add 1 to 2 minutes of cooking time respectively.
  8. Remove the meat from the pan and wrap it in aluminum foil (loosely) or a metal cover. Let it sit for 5 to 10 minutes before serving.
  9. Cut the meat into thick slices. Place it on a large plate and serve with green salad, hot French fries and different sauces (mayonnaise, mustard, ketchup, tartar sauce, etc.)
