Steak fries is a traditional dish consisting of a steak accompanied by fries, commonly served in French brasseries.

Ingredients
- 1 slice of beef filet , approximately ½ lb / 250 g
- 2 tablespoons butter
- salt
- pepper , freshly ground
- 12 oz. French Fries

Instructions
- Remove the meat from the refrigerator 1 hour in advance and pat dry, which will provide a good crust. Season with salt and pepper.
- In a heavy-bottomed pan (ideally cast iron), melt the butter over medium heat.
- Wait until the butter stops foaming before placing the steak in the pan.
- Let the meat cook over high heat for about 1 minute before turning it over.
- Perform the same operation on the other side to obtain a rare steak.
- For a meat more cooked through, reduce the heat temperature after the first 2 minutes to prevent the meat from becoming too dry on the outside. With an extra minute for each side, the meat is medium rare.
- For medium or well-done meat, add 1 to 2 minutes of cooking time respectively.
- Remove the meat from the pan and wrap it in aluminum foil (loosely) or a metal cover. Let it sit for 5 to 10 minutes before serving.
- Cut the meat into thick slices. Place it on a large plate and serve with green salad, hot French fries and different sauces (mayonnaise, mustard, ketchup, tartar sauce, etc.)
