Ingredients

  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried oregano
  • 3/4 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 pounds Russet potatoes
  • 2 tablespoons high-heat cooking fat such as tallow, ghee, olive oil, or avocado oil

Instructions

  1. Preheat the oven to 425°F.
  2. Combine garlic powder, thyme, oregano, salt, and pepper in a small bowl.
  3. Scrub the potatoes clean or peel them if preferred.
  4. Cut each potato into 16 wedges.
  5. Soak potato wedges in cold water for 30 minutes. Drain and pat dry.
  6. Toss the wedges with the seasoning mix and cooking fat, then arrange on a baking sheet in a single layer.
  7. Bake for 20 minutes until edges start to turn golden brown.
  8. Flip the fries and bake for an additional 5-10 minutes until fully golden brown.
  9. Season with extra salt if desired.
