Stir Fry Recipe with Frozen Vegetables

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 1 lb chicken breasts diced
  • 24 oz Asian frozen vegetables I used Birds Eye Steamfresh Asian Medley
  • 1/2 cup water chestnuts optional
stir fry sauce-
  • 1/2 cup chicken stock
  • 1/4 cup sweet chile sauce
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon dried ginger
  • 1/2 tablespoon corn starch
  • salt to taste*
  • black pepper

Instructions

  1. In a large, nonstick skillet, heat olive oil over medium high heat.
  2. Add in onion and chicken and cook 3-5 minutes or until browned and cooked thoroughly.
  3. Stir in frozen veggies (and water chestnuts if using) and heat through.
  4. For the sauce, whisk all ingredients together until smooth.
  5. Pour sauce over chicken and veggies and bring to boil to thicken. Serve over rice or noodles.

Notes

  • *Before adding salt to the sauce, be sure to taste your sauce as soy sauce is quite salty. Opt for a low-sodium soy sauce if you want to have more control over the saltiness.
