Ingredients

  • 1 cup cooked quinoa
  • 1/2 cup Greek yogurt
  • 1/2 teaspoon vanilla
  • 2 teaspoons sugar add more or less for desired level of sweetness
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup sliced strawberries
  • 1/4 cup chopped walnts

Instructions

  1. Cook the quinoa according to the package directions.
  2. Meanwhile in a small bowl, mix plain greek yogurt with sugar, vanilla, cinnamon, and nutmeg.
  3. Combine the yogurt mixture with the hot quinoa, and add sliced strawberries. You can either mix the strawberries in the quinoa mixture or place them on top or both.
  4. Top with chopped walnuts. Serve hot.
