  • 2 cups strawberries
  • tablespoon white wine vinegar
  • 1 tablespoon extra-virgin olive oil EVOO
  • 1 ½ teaspoon sugar
  • tsp  black pepper
  • ¼ teaspoon basil dried
  • lices  French bread
  • tablespoon olive oil
  • ½ cup feta cheese
  • ¼ cup basil fresh leaves

Instructions

  1. Cut the strawberries into small chunks and place in a glass bowl.
  2. Add the vinegar, EVOO, sugar, black pepper and dried basil.
  3. Stir them gently and then put them to one side for 15 minutes to macerate.
  4. Heat a a griddle pan over a medium-high heat.
  5. Brush both sides of the bread slices with olive oil. Then grill for 1-2 minutes a side until they are golden with slight charring.
  6. Crumble the feta into the strawberry mixture, add the basil leaves and stir gently to combine.
  7. Pile the toasts with the strawberry mixture and drizzle over a small amount of the soaking liquid.
  8. Serve immediately.

Notes

  • Feta is salty enough that extra salt usually isn't needed; add any salt on top when serving if desired.
  • Serve the bruschetta immediately to preserve basil leaf freshness and bread crispness.
  • Use fresh basil leaves to maximize flavor contrast with the sweet strawberries.
