Strawberry and Pecan Spinach Salad

This fresh Strawberry and Pecan Spinach Salad is easy to put together, gluten-free and a great way to show off summer strawberries. Make it for an easy lunch or take it to your next cookout.

Ingredients

  • 1 5 oz package of baby spinach
  • 1 cup pecans
  • 1 ½ cups sliced strawberries
  • ½ cup crumbled blue cheese
  • For dressing:
  • 3 tablespoon . grapeseed oil
  • 1 tablespoon honey
  • 1 tablespoon red wine vinegar
  • salt and pepper

Instructions

    Cup of Yum
  1. Put all salad ingredients in a large bowl.
  2. In a small jar mix all dressing ingredients and shake well. Add salt and pepper to taste.
  3. Dress salad immediately before serving.
  4. If you plan to keep this in the fridge for a few days, do not add dressing.
