Ingredients
- 2 cups old fashioned oats
- 1 teaspoon baking powder
- 1/4 teaspoon kosher salt
- 2 cups strawberries divided, chopped
- 1 1/2 cups almond milk or milk or your choice, unsweetened vanilla
- 1/4 cup unsalted butter melted
- 2 egg large
- 1/4 cup pure maple syrup
- 1 1/2 teaspoons vanilla extract
- strawberries for topping, sliced
Instructions
- Preheat the oven to 350 degrees F. Grease an 8x8-inch baking pan with cooking spray and set aside.
- In a large bowl, combine the oats, baking powder, and salt. Set aside.
- Place 1 cup strawberries and the milk in a blender. Blend until smooth.
- Pour the milk over the oat mixture. Add the melted butter, eggs, maple syrup, and vanilla extract. Stir until well combined. Fold in the remaining 1 cup chopped strawberries.
- Pour the mixture into the prepared pan. Top with sliced strawberries.
- Bake for 35 to 40 minutes or until the oats are set and lightly golden brown. Remove from the oven and let cool in the pan for 5 minutes. Cut into squares and serve.
