  • 2 cups strawberries divided, chopped
  • 1 1/2 cups almond milk or milk or your choice, unsweetened vanilla
  • 1/4 cup unsalted butter melted
  • 2 egg large
  • 1/4 cup pure maple syrup
  • 1 1/2 teaspoons vanilla extract
  • strawberries for topping, sliced

Instructions

  1. Preheat the oven to 350 degrees F. Grease an 8x8-inch baking pan with cooking spray and set aside.
  2. In a large bowl, combine the oats, baking powder, and salt. Set aside.
  3. Place 1 cup strawberries and the milk in a blender. Blend until smooth.
  4. Pour the milk over the oat mixture. Add the melted butter, eggs, maple syrup, and vanilla extract. Stir until well combined. Fold in the remaining 1 cup chopped strawberries.
  5. Pour the mixture into the prepared pan. Top with sliced strawberries.
  6. Bake for 35 to 40 minutes or until the oats are set and lightly golden brown. Remove from the oven and let cool in the pan for 5 minutes. Cut into squares and serve.
