Strawberry Baked Oatmeal (Easy!)

This sweet & delicious baked oatmeal features fresh strawberries, maple syrup, vanilla, and tender almonds. A wholesome breakfast that's easy to assemble!

Ingredients

For the wet ingredients:
  • 2 cups plant milk
  • 1/4 cup pure maple syrup
  • 1 Tbsp. chia seeds
  • 1 Tbsp. pure vanilla extract
  • 1/2 tsp. pure almond extract
For the rest:
  • 2 cups old-fashioned rolled oats (gluten-free if needed)
  • 1 tsp. baking powder
  • 8 oz. fresh strawberries (about 1.5 cups diced)
  • 1/4 cup almonds (sliced)

Instructions

  1. Preheat oven to 350°F (176°C).
  2. Dice strawberries (stems removed) and set aside.
  3. In a large mixing bowl, combine all wet ingredients. Gently stir to combine.
  4. Add oats and baking powder to the bowl. Stir well.
  5. Fold in diced strawberries and almonds. Then pour mixture into an 8 x 8 glass baking dish. Press down lightly with a spoon or spatula to submerge the oats.
  6. Bake for about 35-40 minutes.
  7. Either serve immediately, or let rest 10-15 minutes to allow the oatmeal to firm/thicken first.

Notes

  • Nut-free option: Omit almonds, almond extract, and use a dairy-free milk that isn't nut-based.
