Description

This recipe combines ripe strawberries, banana, custard, and icing sugar into a smooth puree using a blender. The mixture is poured into molds and frozen until firm, about four hours. Once frozen, the lollies are dipped in melted chocolate mixed with a little olive oil, which quickly sets to create a thin, crisp coating. Sprinkles can be added immediately for decoration and texture before serving the lollies fresh or storing back in the freezer on greaseproof paper.

Ingredients

Servings
  • 250 g strawberries
  • 70 g banana
  • 40 g icing sugar
  • 80 ml custard

Coating

  • 125 g plain chocolate or mix of plain & milk chocolate
  • 1 tbsp olive oil light
  • Sprinkles

Instructions

  1. Place the strawberries, banana, icing sugar and custard into a blender and blend until smooth (I use a stick blender).
  2. Taste and add more icing sugar if needed and blend again.
  3. Pour into 4 ice lolly moulds (100 ml capacity).
  4. Freeze until solid (about 4 hours).
  5. To make the chocolate coating place a small bowl over a small pan of water, heating gently.
  6. Break the chocolate into the bowl and add the oil stirring until melted.
  7. Take off the heat and cool down to room temperature.
  8. Dip the ice lollies into the chocolate and quickly sprinkle on the sprinkles before the chocolate sets (sets very quickly).
  9. Serve immediately or place on grease proof paper and put back in the freezer.

Notes

  • Use leftover melted chocolate to dip fresh fruit such as strawberries for an easy snack.
