Strawberry, Banana & Custard Ice Lollies
Description
This recipe combines ripe strawberries, banana, custard, and icing sugar into a smooth puree using a blender. The mixture is poured into molds and frozen until firm, about four hours. Once frozen, the lollies are dipped in melted chocolate mixed with a little olive oil, which quickly sets to create a thin, crisp coating. Sprinkles can be added immediately for decoration and texture before serving the lollies fresh or storing back in the freezer on greaseproof paper.
The flavor is a creamy, fruity blend with the custard adding sweetness and silkiness to the natural tang of strawberries and the mellow banana. The contrasting chocolate shell gives a satisfying snap, enhanced by the optional sprinkles. The ice lollies deliver a creamy texture from the custard and fruit while providing a refreshing cold bite perfect for warmer days.
Any leftover melted chocolate can be used as a dip for fresh fruit like strawberries, maximizing use of ingredients and avoiding waste. The method is straightforward, requiring only blending and freezing with a simple chocolate coating step, making it accessible for home preparation.
Ingredients
- 250 g strawberries
- 70 g banana
- 40 g icing sugar
- 80 ml custard
Coating
- 125 g plain chocolate or mix of plain & milk chocolate
- 1 tbsp olive oil light
- Sprinkles
Instructions
- Place the strawberries, banana, icing sugar and custard into a blender and blend until smooth (I use a stick blender).
- Taste and add more icing sugar if needed and blend again.
- Pour into 4 ice lolly moulds (100 ml capacity).
- Freeze until solid (about 4 hours).
- To make the chocolate coating place a small bowl over a small pan of water, heating gently.
- Break the chocolate into the bowl and add the oil stirring until melted.
- Take off the heat and cool down to room temperature.
- Dip the ice lollies into the chocolate and quickly sprinkle on the sprinkles before the chocolate sets (sets very quickly).
- Serve immediately or place on grease proof paper and put back in the freezer.
Notes
- Use leftover melted chocolate to dip fresh fruit such as strawberries for an easy snack.
