Strawberry Burrata Salad

Arugula with juicy strawberries, crisp cucumbers, creamy burrata cheese, pickled red onions, candied pecans, fresh basil, and a drizzle of balsamic vinaigrette. The perfect salad for spring and summer!

Ingredients

  • 5 oz arugula
  • 2 cups sliced strawberries
  • 1 cup Persian cucumbers, sliced
  • 8 oz burrata cheese, at room temperature
  • Kosher salt and black pepper, to taste
  • 1/2 cup chopped candied pecans
  • 1/3 cup chopped basil
  • pickled red onions, optional
  • balsamic vinaigrette

Instructions

  1. Arrange arugula on a large serving platter. Top with strawberries and cucumbers.
  2. Break apart the burrata cheese and arrange it on top of the salad. Season with salt and pepper.
  3. Top with candied pecans, fresh basil, and pickled red onions, if using. Drizzle with balsamic vinaigrette.
  4. Serve with grilled bread or crusty bread, if desired. You can also add homemade croutons to the salad.
