Strawberry Cheesecake French Toast Roll Ups

Strawberry Cheesecake French Toast Roll Ups feature flattened bread slices spread with soft cream cheese and strawberry jam, rolled and dipped in a cinnamon-vanilla egg mixture before skillet cooking. The exterior browns to a tender, slightly crisp crust while the inside stays soft and creamy, echoing cheesecake flavors combined with fruity sweetness. These roll ups work well served with powdered sugar and fresh strawberries.

Ingredients

  • 12 lices bread any kind
  • 4 ounces cream cheese softened
  • ¼ cup strawberry jam
  • 2 large egg large
  • ½ teaspoons vanilla extract
  • 1/3 cup half-and-half or milk
  • 1/8 teaspoon cinnamon
  • 3-4 tablespoons butter
Optional, to serve
  • strawberry fresh
  • 1 tablespoon powdered sugar

Instructions

  1. Slice the crusts off the bread, and using a rolling pin, flatten the bread out.
  2. Making sure the cream cheese is soft and spreadable, spread each slice of bread thickly with cream cheese.
  3. Top without about 1 tsp strawberry jam.
  4. Spread until the surface is covered. Roll up each slice of bread and set aside.
  5. In a shallow dish, whisk together the eggs, vanilla, half & half and cinnamon.
  6. Melt butter in large skillet, over medium heat.
  7. Dip the rolls in the egg mixture, then cook each roll in the skillet, adding more butter if needed, turning to brown evenly. This should take only a few minutes.
To Serve
  1. Sprinkle with powdered sugar, if desired.
  2. Devour.

Notes

  • Substitute strawberry jam with blueberry, raspberry, or peach jam for different flavors.
  • Fresh grated apples with cinnamon make a good alternative filling.
  • Nutella can be used as a filling for a chocolate variation.
  • Store prepared roll ups in the refrigerator and reheat gently in the oven before serving.
  • These roll ups freeze well; reheat in the oven directly from frozen.
  • Decorate with fresh strawberries and a dusting of powdered sugar for serving.
