Description
This recipe starts by mixing old fashioned rolled oats with strawberry cheesecake-flavored protein powder, yogurt, and most of the milk plus honey and chia seeds. The ingredients are combined and chilled for at least two hours, allowing oats and chia seeds to absorb moisture and soften.
Fresh strawberry slices, a pinch of sea salt, and optional lemon juice and zest add brightness and balance the sweetness. Crumbled graham crackers mixed in reinforce the cheesecake theme with a crumbly, slightly crunchy element. Stirring in the remaining milk before serving adds creaminess and looseness to the texture.
The overnight oats are stored covered in the refrigerator and best eaten within three days. Ingredients
- 1 ⅓ cup rolled oats old fashioned
- 2 coops protein powder I used Clean Simple Eats Strawberry Cheesecake, *see note
- ⅔ cup yogurt see note, Chobani Strawberry Cheesecake flavor
- 1 ⅓ cup milk
- ½ tbsp chia seeds
- 1 cup strawberries sliced
- 1 tbsp honey
- 1 tsp lemon optional, juice and zest
- pinch salt sea salt
- 2 graham cracker sheets
Instructions
- In a medium sized mixing bowl, add old fashioned oats, protein powder, 1 cup of milk, yogurt, honey, and chia seeds.
- Use a rubber spatula to stir together until everything is completely mixed. Ensure there are no protein powder clumps.
- Add the fresh strawberry slices, pinch of salt, and lemon juice + zest. Crumble graham cracker sheets on top. Stir again.
- Cover and refrigerate for at least 2 hours or until the oats have absorbed the liquid.
- Prior to serving, stir in the remaining ⅓ cup of milk. This makes them extra creamy.
- Top with sliced strawberries and extra crumbled graham crackers. Enjoy!
Notes
- If strawberry cheesecake protein powder is unavailable, substitute with vanilla or strawberry protein powder and stir in a tablespoon of soft cream cheese for similar flavor.
- Cottage cheese may be used to add tanginess but some may find its texture less desirable.
- Using strawberry-flavored Greek yogurt can substitute for specialty cheesecake flavors.
- Store the finished oats covered in the refrigerator in a mason jar or airtight container; best consumed within three days.
