Strawberry Crumble Bars

Strawberry Crumble Bars are a delicious treat with a shortbread crust, sweet strawberry filling and a crumbly topping. Easy to make with simple ingredients and perfect for sharing. Enjoy these bars as a snack or dessert anytime!

Ingredients

Shortbread Crust
  • 2 ¾ cups whole wheat flour
  • 1 cup melted unsalted butter
  • ½ tsp baking powder
  • ½ cup pure maple syrup
  • 1 tsp vanilla extract
Filling
  • 3 cups fresh strawberries or blueberries and raspberries
  • 3 tbsp tapioca flour
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 2 tbsp pure maple syrup

Instructions

  1. First, preheat your oven to 375 degrees Fahrenheit. Line a 9 inch square pan with parchment paper.
  2. First make the shortbread crust. Combine all crust ingredients in a mixing bowl. Stir until a cookie dough texture forms.
  3. Press ¾ of this mixture into an even layer in the lined pan. Reserve the remaining ¼ for the topping. Use a fork to poke holes in the crust.
  4. Bake the crust for 8 minutes. Remove from the oven.
  5. In a clean bowl, combine all of the filling ingredients. For a smoother texture, mash the berries. Stir until combined.
  6. Transfer this fruit mixture into the pan. Smooth into an even layer.
  7. Sprinkle the remaining crust on top of the fruit.
  8. Bake for 32 to 36 minutes, or until the topping is lightly golden brown and the filling is bubbly around the edges.
  9. Remove from the oven. Cool for 1 hour in the pan then carefully transfer to a wire rack to finish cooling.
  10. Finally, once fully cooled, slice into bars and enjoy!

Notes

  • If you are gluten free, feel free to use gluten free flour.
  • If needed, replace pure maple syrup with honey.
  • The crust mixture will resemble sugar cookie dough.
  • Feel free to use a combination of berries for the filling.
  • These are done baking when the filling is a little bubbly and the topping is slightly golden.
  • Allow the bars to fully cool before slicing into.
  • Store in an airtight container for up to 4 days at room temperature.
