Strawberry Crunch Cake

Crunchy Cake anyone? It may sound strange, but I assure you, you will fall in love with this delicious Strawberry Crunch Cake! Soft, crunchy, fluffy, and more will make the first bite of this dessert incredible.

Ingredients

  • 2 boxes boxes of strawberry cake mix
  • 6 large eggs
  • 1 cup unsalted butter softened
  • 2 cup milk
Cake Crumble
  • 1 cup sugar
  • 3 tablespoon brown sugar
  • 1 1/2 cup cake flour
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 1/2 cup canola oil
  • 2 tablespoon pure vanilla extract
  • 1/2 cup freeze-dried strawberry powder
Vanilla Frosting
  • 2 cup unsalted butter softened
  • 4 cup powdered sugar
  • 2 tablespoon pure vanilla extract
  • 4 tablespoon heavy whipping cream

Instructions

  1. Preheat oven to 350 degrees and spray 3 9in round cake pans with baking spray.
  2. Using a hand mixer, beat the cake mix, eggs, butter, and milk together until combined and smooth.
  3. Divide evenly between the three pans.
  4. Bake in the oven for 25 minutes or until a toothpick comes out clean.
  5. Allow cooling completely.
Frosting Directions

  1. Using a standing mixer, beat all ingredients until combined, smooth and stiff with peaks.
Cake Crumble Directions
  1. Preheat oven to 350 degrees and line a cookie sheet with parchment paper.
  2. Using a standing mixer, combine the sugar, flour, baking powder, and salt until combined.
  3. Gradually mix the oil and vanilla into the mixture.
  4. Continue to mix until crumble mixture forms.
  5. Spread onto the cookie sheet and bake for 8 minutes.
  6. Allow the mixture to cool.
  7. Crumble into bite-size pieces.
  8. Divide half the mixture into a bowl.
  9. Using the half in the bowl, mix in the freeze-dried strawberries.
  10. Mix the rest of the crumble mix together then set aside.
Building the cake:
  1. Remove the cakes from the pans onto the cake boards.
  2. Using a cake leveler, remove the tops of the cakes to create an even layer.
  3. Using one cake layer, scoop 2 C of frosting onto the cake layer and smooth evenly.
  4. Place the second cake layer on top and repeat the frosting step.
  5. Place the third layer on top of the frosting and using the remaining frosting, frost the entire cake.
  6. Use the crumble mixture to completely coat the entire cake.
  7. Place the cake in the fridge and allow it to harden before cutting and enjoying!
