Strawberry Kiwi Lemonade

Ingredients

  • 1 1/2 cups water
  • 1 1/2 cups granulated sugar
  • 1 pound strawberries hulled and halved
  • 4 medium kiwis peeled and halved
  • 1 1/2 cups lemon juice (about 6 large lemons)
  • 1 1/2 cups cold water
  • 1 1/2 cups ice

  1. Pour 1 1/2 cups water into a small saucepan and heat over medium-high heat. Stir in 1 1/2 cups granulated sugar and continue to stir over medium-high heat until the mixture turns clear. This should only take a few minutes. Set this mixture, known as a simple syrup, aside to cool.
  2. Place prepared hulled 1 pound strawberries and peeled 4 medium kiwis into a blender. Add in 1 1/2 cups lemon juice and all of the simple syrup. Blend until smooth. At this point you have lemonade concentrate like you'd buy frozen in a store. You can freeze yours for later use.
  3. To serve, combine the lemonade concentrate with about 1 1/2 cups cold water and 1 1/2 cups ice. The amount of water you use will depend on how strong you like your lemonade.
