Strawberry Lemon Chess Pie

Chess Pie is a thick and creamy pie with flavoring to bring it all together. This Strawberry Lemon Chess Pie may become a new favorite. The curd-like filling is so delicious and the lemon adds a wonderful tartness.

Ingredients

  • 1 ready-made deep dish pie crust
  • 1-1/2 cups sugar
  • 1 tbsp cornmeal
  • 1 tbsp all-purpose flour
  • 3 large eggs
  • 3 tbsp melted butter
  • 1/2 cup lemon juice
  • zest of two lemons
  • 1 can strawberry pie filling

Instructions

  1. Bake ready-made pie crust according to package directions.
  2. Remove and set to the side.
  3. Preheat the oven to 375 degrees
  4. In a large bowl combine sugar, cornmeal, flour, and eggs.
  5. Mix to combine using a whisk.
  6. Stir in melted butter, lemon juice, and lemon zest.
  7. Mix well to combine.
  8. Pour the lemon mixture into the prepared pie crust, spread evenly.
  9. Bake for 35 minutes or until filling is set.
  10. Remove from the oven and allow to cool for 2 hours on a wire rack.
  11. Top with strawberry pie filling.
  12. Place into the refrigerator to chill for 2 hours.
  13. When chilled, top with whipped cream.
  14. Enjoy!
