- ½ cup unsalted butter softened
- ½ teaspoon mint extract
- ⅓ cup light corn syrup
- 3 ¾ cups powdered sugar
- 3 Tablespoons strawberry gelatin powder
Instructions
- In a large mixing bowl, combine butter, extract, corn syrup, sugar, and gelatin. The dough will be crumbly.
- Using your hands, pinch about 2 teaspoons of dough and work it into a ball. Place on parchment paper.
- Repeat until all dough has been rolled. Dip tines of fork in powdered sugar and flatten each mint with a fork.
- All the mints to set at room temperature for about 3 hours, to become firm.

- Store in airtight container at room temperature. Or refrigerate and enjoy chilled.
- The dough will be crumbly when you mix the ingredients together.
- Use your hands to roll the dough into balls. The warmth of your hands will help the dough stay together.
- Dip the fork in powdered sugar before using it to flatten the mints. This will help prevent the dough from sticking to the fork.
- Let the Strawberry Mints set at room temperature for at least 3 hours before you eat them.
