Strawberry Peach Fruit Salad Salsa

Ingredients

  • ½ pound strawberry fresh
  • 1 peach large ripe
  • 1-2 TBSP basil fresh, chopped or sliced
DRESSING
  • ¾ cup orange juice
  • 1 TBSP granulated sugar
  • 1 TBSP white wine vinegar
  • salt teeny pinch

Instructions

  1. First whip up your dressing. This is a sweet orange vinaigrette that allows the flavor of the fruit to really shine.
  2. Combine orange juice, sugar, and vinegar in a small saucepan and bring to a boil.
  3. Cook for 15 minutes until mixture is reduced and thickened into a glaze. The dressing will be pourable but visably thickened. Allow to cool while you chop your fruit.
  4. Hull straweverries by removing the leafy tops and roughly chop/dice. Remove the pit from the peach and dice. Combine fruit with basil in a bowl and, once dressing has had a few minutes to cool, pour dressing over fruit.

Notes

  • Serve the fruit salsa fresh on its own or as a topping for grilled fish or chicken for a balance of sweet and savory.
  • It's excellent over yogurt bowls with granola for added texture and flavor.
  • Feel free to add other fruits like blueberries, kiwi, or diced mango to vary the fruit salad.
  • If adding extra fruit, consider doubling the orange vinaigrette dressing for adequate coverage.
