Strawberry Peach Fruit Salad Salsa

Strawberry Peach Fruit Salad Salsa blends fresh diced strawberries and peaches with chopped basil in a sweet orange vinaigrette glaze. The thickened dressing enhances the natural fruit flavors while adding a subtle tang and sweetness. This versatile salsa can be enjoyed as a fresh fruit salad, a topping for grilled chicken or fish, or paired with yogurt and granola.

Description

The preparation involves simmering orange juice, sugar, and white wine vinegar until reduced into a thick glaze, which is then cooled. Meanwhile, strawberries are hulled and roughly chopped, and peaches are pitted and diced. Fresh basil provides a fragrant herbal note that complements the fruit and the sweet-tart dressing.

The final combination has a balanced profile with sweetness from fruit and sugar, acidity from vinegar and orange juice, and freshness from basil. The salsa is refreshing and lends itself to multiple serving options such as a standalone fruit salad or an accompaniment to savory grilled dishes. It can also add texture and flavor to yogurt bowls when combined with granola.

Additional fruits like blueberries, kiwi, or mango can be included for variety. Doubling the dressing may be necessary if more fruit is added. This salsa stores well and maintains flavor when served chilled.

Ingredients

Servings
  • ½ pound strawberry fresh
  • 1 peach large ripe
  • 1-2 TBSP basil fresh, chopped or sliced

DRESSING

  • ¾ cup orange juice
  • 1 TBSP granulated sugar
  • 1 TBSP white wine vinegar
  • salt teeny pinch

Instructions

  1. First whip up your dressing. This is a sweet orange vinaigrette that allows the flavor of the fruit to really shine.
  2. Combine orange juice, sugar, and vinegar in a small saucepan and bring to a boil.
  3. Cook for 15 minutes until mixture is reduced and thickened into a glaze. The dressing will be pourable but visably thickened. Allow to cool while you chop your fruit.
  4. Hull straweverries by removing the leafy tops and roughly chop/dice. Remove the pit from the peach and dice. Combine fruit with basil in a bowl and, once dressing has had a few minutes to cool, pour dressing over fruit.
  5. Enjoy! See notes for some delicoius serving suggestions.

Notes

  • Serve the fruit salsa fresh on its own or as a topping for grilled fish or chicken for a balance of sweet and savory.
  • It's excellent over yogurt bowls with granola for added texture and flavor.
  • Feel free to add other fruits like blueberries, kiwi, or diced mango to vary the fruit salad.
  • If adding extra fruit, consider doubling the orange vinaigrette dressing for adequate coverage.
