Strawberry Poppy Seed Dressing

Ingredients

  • 1 1/2 cups chopped fresh strawberries
  • 1 medium shallot
  • 1/4 cup red wine vinegar
  • 1 tablespoon honey
  • 1/2 teaspoon ground mustard
  • 1/2 teaspoon Kosher or sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup extra virgin olive oil , or sunflower oil for a more neutral flavor
  • 2 teaspoons poppy seeds

Instructions

  1. In a blender add the strawberries, shallot, vinegar, honey, mustard, salt, and pepper and blend until smooth. Taste and add more salt or honey if desired. With the blender still running, slowly pour in the oil in until the dressing is emulsified. Turn off the blender and stir in the poppy seeds. Transfer to a jar with a lid and chill in the fridge for at least a couple of hours before serving. Will keep for up to a week. The dressing will separate; shake before using.
