Ingredients
- ¾ C unsalted butter softened
- 1 C sugar
- 2 tsp pure vanilla extract
- 4 large eggs
- ¼ C milk
- 2 C flour
- 1 tsp baking soda
- ¼ tsp kosher salt
- 1 ½ C strawberries diced
Cream Cheese Glaze
- 4 tbsp unsalted butter softened
- 4 oz cream cheese softened
- 1 ¼ C powdered sugar
- 2-4 tbsp milk
- 1 tsp pure vanilla extract
Instructions
- Preheat oven to 350 degrees and spray a loaf pan with pam baking spray
- Using a large bowl, whisk together the flour, baking soda, and salt
- Using another large bowl, beat together the butter, sugar, and vanilla until combined and fluffy
- Beat in the eggs, one at a time until combined and smooth
- Beat in the milk until combined
- Gradually beat in the dry ingredients until combined and smooth
- Fold in the diced strawberries
- Scoop batter into the loaf pan and bake in the oven for 45-55 minutes or until a light golden brown and a toothpick comes out clean
- Allow cooling for 15 minutes before removing and placing onto a wire rack

Cream cheese glaze
- Using a large bowl, beat all ingredients together until combined and smooth
- Spread onto the top of the pound cake
- Place into the fridge and allow the cream cheese to harden slightly before cutting into slices and enjoying!
