Strawberry Pound Cake

Ingredients

  • ¾ C unsalted butter softened
  • 1 C sugar
  • 2 tsp pure vanilla extract
  • 4 large eggs
  • ¼ C milk
  • 2 C flour
  • 1 tsp baking soda
  • ¼ tsp kosher salt
  • 1 ½ C strawberries diced
Cream Cheese Glaze
  • 4 tbsp unsalted butter softened
  • 4 oz cream cheese softened
  • 1 ¼ C powdered sugar
  • 2-4 tbsp milk
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat oven to 350 degrees and spray a loaf pan with pam baking spray
  2. Using a large bowl, whisk together the flour, baking soda, and salt
  3. Using another large bowl, beat together the butter, sugar, and vanilla until combined and fluffy
  4. Beat in the eggs, one at a time until combined and smooth
  5. Beat in the milk until combined
  6. Gradually beat in the dry ingredients until combined and smooth
  7. Fold in the diced strawberries
  8. Scoop batter into the loaf pan and bake in the oven for 45-55 minutes or until a light golden brown and a toothpick comes out clean
  9. Allow cooling for 15 minutes before removing and placing onto a wire rack
Cream cheese glaze
    Cup of Yum
  1. Using a large bowl, beat all ingredients together until combined and smooth
  2. Spread onto the top of the pound cake
  3. Place into the fridge and allow the cream cheese to harden slightly before cutting into slices and enjoying!
