Strawberry Quinoa Salad

Ingredients

  • 3 cups quinoa cooked
  • ⅔ quart strawberries ~approx 12 strawberries
  • ½ English cucumber
  • ¼ cup red onion
  • ½ cup feta cheese
  • 1 avocado small
  • ¼ cup dressing of choice 

Instructions

  1. Prepare quinoa according to package instructions.
  2. Wash produce. Then, dice red onion, cucumber, strawberries, and avocado. Add to a salad bowl.
  3. Pour in feta cheese and stir.
  4. Once the quinoa is cooked and cooled, add to the salad bowl and stir.
  5. Toss with dressing of choice. Enjoy!

Notes

  • Serve the salad chilled for best texture and flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Poppy seed, Vidalia onion, or pear vinaigrette dressings work well; simple lemon juice and olive oil is also a good option.
