Strawberry & Quinoa Salad with Toasted Almonds

One can never have too many summer potluck side dishes in their recipe lineup. This fresh Strawberry & Quinoa Salad with Toasted Almonds is a surefire crowd pleaser.

Ingredients

  • ⅔ cups tricolor quinoa rinsed & drained
  • 1 ⅓ cups water
  • 1 cup sliced strawberries
  • 3 tablespoons slivered almonds
  • 2 green onions thinly sliced
The Dressing:
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons extra-virgin olive oil
  • 2 teaspoons agave nectar or honey
  • ¼ teaspoon salt

Instructions

  1. Combine the quinoa and water in a medium saucepan set over high heat. Bring to a boil, cover and reduce the heat to low. Cook until all of the water is absorbed, 18 to 20 minutes. Spread the quinoa on a baking sheet and let cool.
  2. In a serving bowl, combine the cooled quinoa, strawberries, almonds and green onions.
  3. Toss with the dressing. Serve.
The Dressing:
  1. In a small bowl, whisk together the lemon juice, olive oil, agave nectar and salt.
